Pre-Convention Workshops

Thursday March 14th, 2024

Please Note: These workshops are open to Processors only until March 1st. If there is space available after that, Suppliers will be able to sign up. Thank you.

On Thursday, March 14th, 2024, there will be two workshops. This is in addition to the other events of the convention and there will be an additional charge for this event.

Class 1 – Sausage Making – Presented by Jake Sailer, Sailers Meats in Elmwood, WI
– Jake will be teaching his class at the Oregon State University Clark Meat Lab. This will be a 2 1⁄2 hour class covering fresh sausage production from the selection of the cut to the grind to the casing to the seasoning. Jake has won multiple awards for sausage making and other cured meats both in Wisconsin and at the AAMP show. You won’t want to miss it!

Class 2 – Ham and Bacon Making – Presented by Jerry Haun, Haun’s Meat and Sausage, Walla Walla, WA
– Jerry will be teaching his class at the Linn County Convention Center. Jerry will be teaching a 2 1⁄2 hour class covering both how to produce an award winning ham and an award winning bacon. Jerry has won multiple awards for his bacon and ham both in our own NWMPA show, the MMPA show as well as multiple national awards at AAMP.

For $50.00 per person, you will be able to attend both classes! This is limited to the first 112 people who sign up! This covers bus service, lunch and both classes.

Pre-Convention Thursday Night Dinner

Thursday March 14th, 2024

Optional Dinner for Thursday Night – Each group is limited to 100 persons. Registration limited!

Option #1

Bus service to Deluxe Brewing in Albany, OR. Bus leaves Convention Center at 5:00pm, arrives at Deluxe Brewing at 5:30pm. Dinner is provided as well as a tour of the distillery and brewery. You are welcome to purchase your own beverages at the brewery. Bus service returns to Convention Center 8:00-8:30pm.

Option #2

Bus service to Scenic Valley Farm in Gervais, OR. Bus leaves Convention Center at 5:00pm, arrives at winery at 5:45pm. Dinner is provided as well as 2 glasses of wine. A wine pairing class will be provided by the owners. You are welcome to purchase additional beverages at the winery. Bus service returns to convention Center 8:00-8:30pm.

$50.00 per person includes dinner and bus service.

11:30am – Class concludes and bus leaves back to Linn County Expo Center

12:00pm – Arrive at Linn County Convention Center for lunch

12:30pm – Lunch concludes and Class with Jerry Haun begins at LCEC

9:00am – Class begins with Jerry Haun at Linn County Expo Center begins in Willamette Conference Center

11:30am – Class concludes and lunch begins at Linn County Expo Center

12:30pm – Bus arrives at Clark Meat Processing Lab for class with Jake Sailer

3:00pm – Class concludes and bus takes everyone back to LCEC

3:30pm – Bus arrives back at LCEC

5:00pm – Busses are ready to transport everyone who signed up for dinner at Deluxe Brewing or at Scenic Valley Farm Winery.

8:00pm – Busses load back up for transportation back to the Linn County Expo Center.

8:30pm – Busses arrive back at the LCEC

Friday, March 15th

7:30am – 11:30am – Registration opens. Must be registered to attend bus tours.

7:30am – 10:00am – Check in of cured meats – Main Entrance to Expo Halls
